Chef Jordan's Breakfast Cooking Class

Let's be serious, we all know the best and most important meal of the day is Breakfast.  Furthermore, it is always the best when covered in a delicious Hollandaise, contains crispy bacon, farm fresh eggs, homemade breads and pastries, farm fresh eggs, piping hot coffee, and much more....

We have often had Breakfast-y items on the Dinner Menu at the Pear since we are also a bed and breakfast.  But never have we highlighted this beautiful meal as a Cooking Class!  After having served many breakfast guests over the years, it is time to explain how Chef Jordan makes his Hollandaise so amazingly good, his danishes so plump and sweet, his eggs so truffle-y and his bacon cured so beautifully.  

What is even better with a good breakfast than delicious coffee?  After years of searching for a coffee that has like minded philosophy to that of our Bartlett Pear, we found the perfect Roaster!  Taylor Hale of Night Kitchen Coffee roasts his own beans in Cambridge, MD. He and his wife have been a longtime supporters of Bartlett Pear and we are pleased to now present his carefully roasted, incredible attention to detail coffee at the Pear from dinner and breakfast.  Guess what is even better news?  Chef Jordan and Talyor are going to team up to offer a coffee pairing during this lovely Breakfast Lesson!

Fruit Plate for each Table
Batch brewed coffee using our Bartlett Pear house specialty, a micro lot from the farms of Lucio Villca in the Caranavi region.


Wild King Salmon Gravlax, Bagel Chips, Tarragon-Dill Cream Cheese 
Pour over featuring a “Cup Of Excellence” award winning coffee from Finca Rosma in Guatemala.


Perigord Truffle Scrambled Eggs 
Cafe au Lait – featuring a cold brewed coffee from Java and scalded Nice Farms Creamery skim milk. We will use a technique favored by 18th century Dutch traders in Java.


Inn Cured Bresaola Chipped Beef, Parmesan Mornay Sauce, Pan Di Mie 
Cafe de Olla, Night Kitchen Style. This is a spice and citrus infused coffee made in a traditional Mexican approach, brewed with our Colombian micro lot coffee.  


Eggs Benedict, Creekstone Farms Inn Made Bacon, Stonehouse Farms Hollandaise Potato & Caramelized Onion Hash Brown 
French Press demo featuring an Ethiopian Yirga Cheffe coffee. The Yirga Cheffe region is one of the earliest regions of the world where coffee was cultivated.


Pear Danish 
Race Street Blend will make a second appearance but made in an Italian Mocha Pot. Not a pure espresso, the Bialleti pots are a standard in Italian households.
